Coconut Macaroons


The days have been so nice here in Georgia.

So nice that once again,the oven came back on.

This recipe for macaroons is quick, easy and satisfies a craving for something sweet.

The coconut for some reason, reminded me that Christmas is coming soon. Maybe it reminds me so because it resembles snow?

This recipe only makes 12. I think next time I will double it!

Coconut Macaroons:

2 egg whites
1/3 cup sugar
2 tablespoons all purpose flour
¼ teaspoon almond extract
2 cups coconut
Silvered almonds
Semi sweet chocolate bits
1 tablespoon butter
1/3 cup of milk

Heat oven to 325 degrees.
Grease and lightly flour cookie sheet.
In a medium bowl, beat egg whites until frothy.
Add sugar, flour, salt and almond extract and blend.
Stir in coconut.

Drop dough by tablespoons 2 inches apart onto greased and floured cookie sheet.
Gently press a few silvered almonds onto each mound.


Bake at 325 degrees for 14-17 minutes or until set and light golden brown.
Remove from cookie sheet.

Place semi sweet chocolate chips and butter in microwave safe bowl.
Melt
Add milk and whisk.
Drizzle over macaroons.

  1. I'm originally a Georgia girl myself, but I've never made macaroons. I've always loved them though! Thanks for the recipe! :-)
